Description

The preparation of kombucha begins with the creation of a sweet tea. Next, a kombucha “mushroom”, also called a “kombucha mother” or “SCOBY” (for “symbiotic culture of bacteria and yeast”), is added to the mix. This fungus is a symbiotic culture of bacteria and yeast that ferment the sugar in the tea, creating a slightly fizzy and tart drink.
Fermentation of kombucha can take anywhere from a few days to several weeks, depending on environmental conditions. The end result is a slightly effervescent drink with a tart flavor and hints of tea.
Kombucha is considered a healthy drink because it contains gut-healthy probiotics, antioxidants, and organic acids that help detoxify the body. However, it is important to note that kombucha also contains alcohol in small amounts, usually less than 0.5%.
